
Happy July! I hope you’re enjoying every little bit of the summer. I’ve started to see people talk about fall and I’m just not even remotely close to being there yet. What ever happened to enjoying the season you’re in? We spent a good chunk of this month at Lake Tahoe and it was exactly what I needed to reset. Nothing beats quality time with your family, so if you’re able to sneak away (even if it’s just for a night or two) I’d highly recommend it!

Looking for an easy yet delicious appetizer idea? This mozzarella tomato app is a new favorite in our household, and it would be perfect to whip up when hosting friends and family this season!
Ingredients
For the dressing
- Extra-virgin olive oil
- Juice of 1–2 lemons, to taste
- 1–2 teaspoons Dijon mustard
- About 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 2–3 tablespoons fresh parsley, finely chopped
- 2–3 tablespoons fresh dill, finely chopped
- Salt, to taste
- Freshly cracked black pepper, to taste
- Onion powder, to taste
For the salad
- 1 pound orzo, cooked according to package directions and cooled
- Persian or English cucumbers, diced
- Cherry or grape tomatoes, halved
- Castelvetrano olives, sliced
- Crumbled feta cheese
Instructions
- In the bottom of a large serving bowl, whisk together the olive oil, lemon juice, Dijon mustard, red wine vinegar, garlic, parsley, dill, salt, pepper, and a sprinkle of onion powder until well combined.
- Add the diced cucumbers, tomatoes, and sliced Castelvetrano olives directly to the dressing. Toss to coat, then let the vegetables marinate while the orzo cools. This simple step adds so much flavor.
- Once the orzo has cooled to room temperature, add it to the bowl and toss until every piece is evenly coated in the dressing.
- Gently fold in the crumbled feta cheese.
- Taste and adjust the seasoning as needed, adding more salt, pepper, lemon juice, olive oil, fresh herbs, or any additional seasonings you enjoy.
- Serve immediately, or refrigerate for about an hour before serving to allow the flavors to meld. It tastes even better after it has had time to sit.
