Easy Weeknight Rosemary Chicken Thighs

I know that many of you Whiskies are looking for more recipes, and honestly, it’s one of the most frequent requests I get in my DMs. Cooking for your family on a busy weeknight seems to be a common pain point, so that inspired this tasty yet quick dinner idea.

Mark and I are big fans of this chicken thigh dish, but the icing on the cake is that our kids enjoy it too. It’s simple, requires minimal ingredients, and can hit your dinner table in under an hour. Just serve it with a veggie and some potatoes for a complete meal!

Rosemary Chicken Thigh Recipe

Ingredients

  • 4-6 bone-in, skin on chicken thighs
  • 3-4 springs rosemary, stem removed
  • Kosher salt to your liking
  • 1/4 cup avocado oil
  • 6 button mushrooms, quartered
  • 3-4 Yukon gold potatoes, cubed
  • 3 lemons
  • 1/2 cup white wine

Instructions

  1. Preheat your oven to 400°
  2. Pour your salt onto your cutting board and put the rosemary on top of it. Next, chop the rosemary into the salt.
  3. Take a little of avocado oil and drizzle over the chicken. Then, take the rosemary salt and sprinkle on all sides of the chicken. You can let rest for 15 minutes or cook right away.
  4. Heat avocado oil in a large cast iron pan. Dip a wooden spoon to test to see how hot the oil is. If the oil bubbles around the spoon it means your oil is hot enough. Next, add the chicken skin side down and fry until golden brown.
  5. Once golden brown, remove the chicken from the pan and add the mushrooms and potatoes.
  6. Pour the wine and juice the lemons over the  mushrooms and potatoes.
  7. Add the chicken to the top of the potatoes and mushrooms skin side up.
  8. Place the entire cast iron pan into the oven for 25 minutes or until chicken reaches 165° internally.
  9. Serve with green beans and rice. Be sure and pour the yummy juice at the bottom of the pan over the rice, chicken, and potatoes. Oh, and enjoy alongside your favorite white wine of course!
