This might be the most asked about recipe I’ve shared to date—and honestly—it’s so damn good that I’m not surprised. I made this for a get-together with family and friends and it was such a hit with kids and adults alike. It’s quick to make, has a ton of flavor, and it’s unique yet easy to find ingredients for.

Whether you’re hosting a little soirée at your house or you’re looking for something to munch on during a lazy Sunday, I swear this will be your new go-to recipe. Bon appétit!

Chicken Tortellini Salad

Salad Ingredients

  • 2 packs cheese tortellini pasta
  • 1 rotisserie chicken
  • 1 bunch green onions
  • ½ red onion
  • 1 avocado
  • 3-4 oz. crumble goat cheese
  • 2 cups cherry tomatoes, halved or quartered
  • ½ cup pomegranate seeds
  • 1-2 cups arugula

Dressing Ingredients

  • ½ cup red wine vinegar
  • ¼ cup olive oil
  • 1 Tbsp dijon mustard
  • ½ squeeze fresh lemon juice
  • 1 tsp honey
  • Salt and pepper

Dressing Instructions

  1. Finely chop red and green onions and place in a bowl
  2. Quarter cherry tomatoes and add to the bowl
  3. In a separate bowl, mix the red wine vinegar, olive oil, dijon mustard, honey, lemon juice, and salt and pepper
  4. Next, add the dressing to the bowl with the tomatoes and onions and mix thoroughly
  5. Cover and let sit for at least an hour—the longer, the more flavor you’ll get!

Salad Instructions

  1. Bring a large pot of water to a boil
  2. Add salt to water once boiling, then add the tortellini and cook according to the package
  3. Once the pasta is ready, drain and spread onto a shallow platter
  4. Add crumbled goat cheese and mix until melted with pasta
  5. Add the shredded chicken and mix
  6. Add the tomato and onion dressing (instructions above) and mix until well combined
  7. Top with arugula and pomegranate seeds, then serve with avocado slices
