This might be the most asked about recipe I’ve shared to date—and honestly—it’s so damn good that I’m not surprised. I made this for a get-together with family and friends and it was such a hit with kids and adults alike. It’s quick to make, has a ton of flavor, and it’s unique yet easy to find ingredients for.

Chicken Tortellini Salad
Salad Ingredients
- 2 packs cheese tortellini pasta
- 1 rotisserie chicken
- 1 bunch green onions
- ½ red onion
- 1 avocado
- 3-4 oz. crumble goat cheese
- 2 cups cherry tomatoes, halved or quartered
- ½ cup pomegranate seeds
- 1-2 cups arugula
Dressing Ingredients
- ½ cup red wine vinegar
- ¼ cup olive oil
- 1 Tbsp dijon mustard
- ½ squeeze fresh lemon juice
- 1 tsp honey
- Salt and pepper
Dressing Instructions
- Finely chop red and green onions and place in a bowl
- Quarter cherry tomatoes and add to the bowl
- In a separate bowl, mix the red wine vinegar, olive oil, dijon mustard, honey, lemon juice, and salt and pepper
- Next, add the dressing to the bowl with the tomatoes and onions and mix thoroughly
- Cover and let sit for at least an hour—the longer, the more flavor you’ll get!
Salad Instructions
- Bring a large pot of water to a boil
- Add salt to water once boiling, then add the tortellini and cook according to the package
- Once the pasta is ready, drain and spread onto a shallow platter
- Add crumbled goat cheese and mix until melted with pasta
- Add the shredded chicken and mix
- Add the tomato and onion dressing (instructions above) and mix until well combined
- Top with arugula and pomegranate seeds, then serve with avocado slices
