
Bruschetta chicken has been a long-standing favorite of mine. It’s a classic, crowd-pleasing dish that can be served for any occasion and during any season. It’s packed with flavor and there’s honestly just something that’s so comforting about this meal.
I like to top it with chopped basil and then serve it with green beans and rice, but you really can make it your own! If you’re looking for an easy yet delicious dinner idea or if you need something quick and healthy to make on a busy night, this bruschetta chicken recipe is it.
Oh, and another perk is that this meal can be made with ingredients just from Trader Joe’s (so you don’t have to run from grocery store to grocery store to get prepped!)
Bruschetta Chicken Recipe
Ingredients
- 2-4 chicken breasts, depending on how many people you’re serving
- Trader Joe’s bruschetta sauce (found in the refrigerator section)
- Organic mozzarella cheese or the pre-sliced mozzarella cheese
- Trader Joe’s Balsamic Glaze
Instructions
- Preheat your oven to 350 degrees, then season your chicken breast with salt, pepper, onion powder, and Italian seasoning.
- Using a cast iron pan, heat up a couple tablespoons of avocado oil, evoo, or butter. Once oil is hot, brown both sides of your chicken.
- Once both sides are brown (but not cooked through) add the bruschetta sauce to cover the chicken. Then put the entire cast iron pan of chicken into the oven and cook about 10 minutes or until chicken breasts reach 165° internally.
- Once cooked, add the mozzarella slices to cover each chicken breast and stick back in the oven for two to five minutes more until cheese is melted.
- Remove from oven and drizzle with balsamic glaze. You can add chopped basil and sprinkle over the dish if you’d like. I serve this with rice and green beans!
