I recently made this Instant Pot potato recipe for my family and we all are hooked on them now. They’re so tasty and truly couldn’t be easier to prepare.
If you’re looking for a comforting side dish (that doesn’t take a lot of effort), I swear this will be your new go-to. It would also be a great choice to make while hosting friends or family. Pair them with any type of protein and a veggie and you’ll have a well-rounded meal. Oh, and another bonus is that kids love them—let them choose their own toppings for a fun and satisfying meal!
Instant Pot Potato Recipe
Ingredients
- 4 russet potatoes
- 1 cup water
- Avocado oil, butter, or EVOO
- Salt, pepper, and onion powder
Topping Ideas
- Sour cream
- Bacon, chopped
- Chives, chopped
- Broccoli
- Shredded cheese
Instructions
- Place the rack in your Instant Pot and add a cup of water.
- Puncture your potatoes with a fork a few times, then add them into the Instant Pot. I put my Instant Pot on manual for 20 minutes when using larger potatoes. Be sure your knob on top is pointed toward the ceiling. Once the timer goes off, let it natural release for 10 minutes.
- Optional step: If you want crispy potato skins, remove them from the Instant Pot and add them to a baking sheet. Add oil or butter, plus salt, pepper, and onion powder and broil them for 2 minutes, then rotate and broil for another 2 minutes.
- Once done, add your favorite toppings and enjoy!
