
We all have those nights when we’re not quite sure what to cook — and that’s where this recipe comes in handy! This has been my go-to meal when I need to throw something together on a whim. The best part? It doesn’t taste like it was an after thought and it’s a total crowd pleaser for both adults and kids.
If you’re stumped on what to make or you simply need something quick for weeknights, this Mexican casserole recipe will be your new favorite. It scores bonus points for using limited dishes. Plus, the leftovers are just as good (if not better!)

Mexican Casserole Recipe
Ingredients
- 1 pound ground beef
- 1/2 cup rice
- 1 cup chicken or beef broth
- 1 packet taco seasoning (I love Siete)
- 1/2 yellow or white onion, diced
- 1 14oz can chopped or diced tomatoes
- 1 small can diced green chilies
- 1/2 to 1 cup of frozen corn (up to you)
Toppings
- Freshly shredded jack cheese
- Green onions, diced
- Sour cream
- Cilantro
- Chips
- Sliced avocado
- Black olives
- Fresh squeezed lime

Instructions
- Start by browning and breaking down the ground beef in a skillet that has a lid.
- Add the onions and sauté until translucent.
- Add the taco seasoning and incorporate.
- Add the rice and mix it all together
- Add the chilis, tomatoes, and corn. Mix, then add the broth.
- Bring to a simmer and then add the lid and cook for about 20 minutes or until rice is fully cooked. Remove lid, add casserole to bowls, then top with your favorite toppings!
